Indo Chinese recipes are my all-time favourite snack meal recipes. It is primarily due to the flavour and taste combinations it provides in each bite. The main reason for mentioning Indo Chinese in this South Indian recipe post is to acknowledge that it was derived from it. In general, cornflour is not used in Indian snack recipes. However, cornflour is used in this recipe to achieve the crisp texture, which is similar to Indo Chinese. Later, it is used in a south Indian tadka, making it unique and indigenous to the region. In other words, it is native to South India due to the combination of onions, garlic, and fresh herbs.

In addition, some additional tips, suggestions, and variations to the gobi pepper fry recipe. First and foremost, I always recommend using fresh and tender cauliflower for any gobi snacks recipe. With the final recipe, this would make it crispier, juicier, and tastier. Second, the cornflour and maida combination used in this recipe should yield a crunchy and crispy gobi pakora. However, if you prefer it crisper, you can add more cornflour. Finally, once the deep-frying process is complete, it should be used immediately for tempering.

This is a quick and easy stir fry with cauliflower and pepper powder. It is quick to prepare and requires few ingredients. It's delicious with rasam, sambar, and curd rice. Today we will make Cauliflower Pepper Fry using this simple recipe with step-by-step photos.

To make crispy gobi:

  • 2 cups  gobi / cauliflower   (florets)
  • 1 tsp salt
  • hot water   (for blanching)
  • 1 cup  maida
  • 3/4 cup  corn flour
  • 1/4 tsp turmeric
  • 1/2 tsp  pepper powder
  • 1/2 tsp  salt
  • 1 cup  water   (for batter)
  • oil   (for frying)

For the pepper fry:

  • 2 tbsp  oil
  • 1/2 tsp  cumin
  • 1/2 tsp  fennel / saunf
  • few curry leaves
  • 1 onion  (finely chopped)
  • 5  clove garlic   (crushed)
  • 1 inch  ginger   (chopped)
  • 1/2 capsicum   (finely chopped)
  • 1/4 tsp  turmeric
  • 1/2 tsp  cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp  pepper powder
  • 1/2 tsp  salt
  • 2 tbsp tomato sauce
  • 2 tbsp coriander  (finely chopped)


Step-by-step instructions for making gobi pepper fry:

  • First, place 2 cups gobi in a large mixing bowl. Take florets that are all the same size.
  • Pour in 1 tsp salt and hot water.
  • Soak for 5 minutes, or until the gobi is slightly blanched.
  • Drain and set aside to completely cool.
  • 1 cup maida and 3/4 cup corn flour in a mixing bowl
  • Also add 1/4 tsp turmeric, 1/2 tsp pepper powder, and 1/2 tsp salt
  • Adding 1 cup water, whisk well to ensure there are no lumps.
  • Now add the blanched gobi and coat thoroughly with batter.
  • Deep fry in hot oil with a medium flame.
  • Stir occasionally to ensure even cooking.
  • Fry the gobi until golden brown and crisp. For a crunchier bite, double fry.
  • Drain, making sure to remove any excess oil. Set aside.
  • 2 tbsp oil in a large wok 1/2 tsp cumin, 1/2 tsp fennel, and a few curry leaves
  • Splutter the spices until they become aromatic.
  • Now add 1 onion, 5 garlic cloves, and 1 inch ginger. Stir-fry on high heat.
  • Add 1/2 capsicum and stir fry until it becomes crunchy.
  • Add 1/4 tsp turmeric, 1/2 tsp cumin powder, 1/2 tsp coriander powder, 1/2 tsp pepper powder, 1/2 tsp salt, and 2 tbsp tomato sauce
  • On high heat, stir until the spices are well combined.
  • Mix in the fried gobi gently. Gobi will lose its crunchiness if overcooked.
  • Finally, add 2 tbsp coriander leaves and serve crispy gobi pepper fry.
