Moong Sprouts Recipe: A healthy and nutritious spicy masala curry made with green gramme sprouts This sprouts sabzi or sprouts gravy goes well with roti, chapathi, and even rice for lunch or dinner.

Sprouts are a protein-rich food that provides essential nutrients, particularly to vegetarians. Sprouts can be easily incorporated into a curry, which can be made with either dry spices or an onion and tomato-based sauce. However, it can also be used in soup, salad, and chaat recipes.

I’ve shared a number of simple Indian curry recipes that include paneer or other vegetables. This Moong Sprouts recipe is simple and can be prepared in under 30 minutes. Ideal for a quick weeknight dinner. This recipe requires no grinding of masalas or other spices, making it ideal for bachelors to try.
Homemade moong sprouts are preferred, but if you are short on time, readymade will suffice. Here's how to make sprouts at home.

Ingredients
  

  • 3/4 cup  whole moong dal / green gram dal
  • water for soaking
  • 3 tsp  oil
  • 1 tsp  mustard seeds / rai
  • 1/2 tsp  cumin / jeera
  • pinch of hing / asafoetida
  • 1 small onion (finely chopped)  (finely chopped)
  • 1 tbsp  ginger-garlic paste
  • 2  green chili  (slit lengthwise)
  • 2  tomatoes   (finely chopped)
  • 1/2 tsp  turmeric / haldi
  • 1 tsp  kashmiri red chili powder / lal mirch powder
  • 1 tsp coriander powder / daniya powder
  • 1/2 tsp  garam masala powder
  • 1/2 tsp  dry mango powder / aamchur powder
  • salt to taste
  • 1/2 tsp  jaggery
  • 3 cups water   (add as required)
  • 1 tbsp coriander leaves   (finely chopped)

Instructions
 

Step-by-step instructions for making sprouts curry or sprouts recipe:

  • First, soak the whole moong dal in water overnight.
  • Drain the water even more. Hang the soaked moong dal in a cloth overnight.
  • Moong sprouts appear in the dal the next day. Set aside.
  • Heat the oil in a large kadai.
  • Mix in the mustard seeds, cumin, and hing. allow sputtering
  • Moreover, add onions and continue to sauté.
  • Add the ginger garlic paste and green chilies as well. Sauté until the raw aroma is gone.
  • Additionally, add tomato and sauté well.
  • Cook until the tomatoes are soft and mushy.
  • Add turmeric, chilli powder, coriander powder, garam masala powder, dry mango powder, jaggery, and salt to taste.
  • Sauté on low heat until the masala is completely cooked and releases oil from the sides.
  • Add sprouted moong dal at the end.
  • Also add water and thoroughly mix
  • As needed, adjust the consistency by adding water.
  • Simmer for 20 minutes, covered, or pressure cook for 2 whistles.
  • Cook the dal thoroughly, but don't overcook it or the sprouts will lose their nutritional value.
  • Finally, serve the sprouts curry with jowar roti or rice, garnished with coriander leaves.
