Kathal Biryani Recipe: A flavorful rice biriyani recipe using young jackfruit and biriyani masala Because of its striking similarities to the famous mutton biriyani, it is frequently regarded as a meat substitute biriyani. It is typically prepared during India’s early monsoon season, when young and tender jackfruit is readily available.

Vegetarian meat is another name for unripe jackfruit. When cooked, raw jackfruit has a soft meaty texture, which is why this biryani, while not widely known outside of India, is considered a delicacy.

We are all familiar with the history of biriyani and its resemblance to the types of meat used to prepare it. Previously, we would visit various nearby restaurants in search of an authentic dum biriyani. However, we have ceased operations because we were unable to obtain authentic and genuine biriyani. In short, we have concluded that homemade biryanis are much better in taste and health, and thus better to make at home. This has led to the exploration of additional types of veg biriyani options, the most recent of which is the kathal biriyani. To be honest, I’m not sure what a meat biriyani tastes like, but this has to be something similar. The tender jackfruit slices, in particular, bear striking resemblances to the meat variant. As a result, I would recommend giving it a try.

Additionally, some additional tips, suggestions, and variations to the jackfruit biriyani recipe First and foremost, I’ve shown a jackfruit and mixed vegetable combination in this recipe. I prefer it this way, but you can prepare it with just tender jackfruit slices if you prefer. In that case, you may need to double the amount. Second, never use sweet or ripe jackfruit slices in this recipe. It would ruin the taste and also reduce the spice heat of the biriyani flavour. Finally, the jackfruit and mixed vegetables must be thoroughly marinated. Furthermore, while marinating, you may notice a strong spicy flavour, which will fade gradually once the dish has rested.

Nothing is more filling and comforting than a pot of biryani, and this unique version of Vegetarian Biryani is made with raw jackfruit. This biryani is absolutely delicious.

Ingredients
  

To marinate:

  • 1 cup curd
  • 1 tsp  ginger garlic paste
  • 1/4 tsp  turmeric
  • 1 tsp  chilli powder
  • 3 tbsp  biryani masala
  • 1/2 tsp  salt
  • 2 tsp lemon juice
  • 2 tsp  oil
  • 3 tbsp  coriander   (chopped)
  • 3 tbsp  mint  (chopped)
  • 12-15 pieces jackfruit   (raw)
  • 1  carrot   (chopped)
  • 1 potato   (chopped)
  • 5  beans   (chopped)
  • 2 tbsp  fried onions / barista

Rice for biryani:

  • 2 cups  basmati rice
  • 1 tsp  cumin
  • 2  star anise
  • 2  bay leaf
  • 1 tsp  pepper
  • 1/2 tsp  cloves
  • 4  cardamom
  • 2 tsp lemon juice
  • 2  chilli
  • 1 tbsp  salt

To make biryani gravy:

  • 2 tbsp  ghee / clarified butter
  • 2 tbsp oil
  • 1  bay leaf
  • 1 inch   cinnamon
  • 1  black cardamom
  • 1/2 tsp  cloves
  • 4  cardamom
  • 1  star anise
  • 1 tsp  cumin
  • 2  onion   (finely chopped)
  • 1 tsp  ginger garlic paste
  • 8  cubes capsicum

How to Marinate Vegetables for Biryani:

  • First, place 1 cup curd in a large mixing bowl. Make sure you get thick, slightly sour curd.
  • Add 1 teaspoon ginger garlic paste, 1/4 teaspoon turmeric, 1 teaspoon chilli powder, 3 tablespoons biryani masala, and 1/2 teaspoon salt Because the biryani masala contains salt, I simply added 1/2 tsp extra salt.
  • Add 2 tsp lemon juice, 2 tsp oil, 3 tbsp coriander, and 3 tbsp mint as well.
  • Mix thoroughly to ensure that all of the spices are well combined.
  • Now add 12 jackfruit pieces, 1 carrot, 1 potato, 5 beans, and 2 tbsp fried onions.
  • Make sure all of the vegetables are well coated with the mixture.
  • Cover and set aside for 30 minutes to allow the marinade to work its magic.

How to prepare rice for biryani:

  • Rinse and soak long grain basmati rice for 20 minutes first.
  • Fill a large vessel halfway with water and add spices.
  • Add 2 tsp lemon juice, 2 chilies, and 1 tbsp salt as well.
  • Bring to a boil after thoroughly mixing.
  • Now add the soaked rice and mix well.
  • Boil for 2 minutes, or until the rice is nearly done.
  • The biryani rice is now ready to be used in the preparation of biryani.

Kathal biryani preparation:

  • 2 tbsp ghee and 2 tbsp oil, heated in a large kadai
  • Add 1 bay leaf, 1 cinnamon stick, 1 black cardamom, 1/2 teaspoon cloves, 4 cardamom, 1 star anise, and 1 teaspoon cumin
  • Cook until the spices become aromatic.
  • Add 2 onions and 1 teaspoon ginger garlic paste sautéed until golden brown
  • Add 8 cubes of capsicum and sauté for 2 minutes more.
  • Cook for 2 minutes after adding the marinated vegetables.
  • Cook, covered, for 10 minutes, or until the vegetables are almost done.
  • Spread the vegetables evenly to form a nice layer.
  • Spread the almost-cooked basmati rice evenly.
  • Top with 2 tablespoons saffron milk, 2 tablespoons coriander, 2 tablespoons mint, 1 tablespoon biryani masala, and 2 tablespoons ghee.
  • Simmer for 30 minutes, covered. To prevent steam from escaping, plug the hole.
  • Finally, serve the kathal biryani with raita and salan.

Notes:

  • To begin, soak the rice to obtain extra-long grains while cooking.
