My love for kulfi most likely began during my school days. I used to get a matka kulfi near my school and top it with pistachios. It used to taste incredible and out-of-this-world. But, sadly, we had to relocate to Udupi, and I never got the same taste again. Perhaps it was while searching for the same flavour that I discovered this amazing kulfi recipe. and today I’m going to share it with you all.
My love for Kulfi is unending, and I have always preferred homemade Kulfis to store-bought ones. As a result, for a special occasion, I made traditional homemade Kesar Pista Kulfi at home.

While some Kulfi Shops and Restaurants serve it plain, others top it with a handful of falooda and a drizzle of rose syrup.
This Kesar Pista Kulfi is a summertime staple in my house, and we frequently indulge in it after our weekend meals.
Furthermore, before diving into the actual recipe, I wanted to touch base with the history of kulfi. Basically, kulfi is a Persian word, and this recipe dates back to the Mughal dynasty. Sweet thick evaporated milk was well-known among Hindus even before the establishment of the Mughul dynasty. The same mixture was topped with pistachios, kesar, by the mughal community. and gave a cone shape to deep freeze in slurry ice

Kesar Pista Kulfi Recipe
- 1.5 litre milk (full cream)
- 1/4 cup cream (optional)
- 1/4 cup sugar (adjust to your sweetness)
- 20-25 pistachios (chopped)
- 2 tbsp saffron milk
- 1/2 tsp cardamom powder
- First, bring 1.5 – 2 litres of full cream milk to a boil in a heavy-bottomed saucepan.
- When the milk has reached a boil, add the cream and give it a good stir.
- Moreover, simmer for 30 minutes, stirring occasionally.
- Next, add the sugar and thoroughly mix it in.
- Simmer for 5 minutes, or until the milk is completely thickened.
- Add chopped pistachios, saffron milk, and cardamom powder to taste.
- Then give it a good stir and simmer for another 5 minutes.
- Allow the thickened milk to completely cool. This could take up to an hour.
- After the milk has completely cooled, transfer it to kulfi moulds or a plastic glass.
- Cling wrap or aluminium foil can be used to cover the glass.
- Moreover, place the cup in the freezer for at least 5 hours or overnight.
- when the kufi is completely set after 5 hours or more Place a stick between the cups.
- Then, gradually warm up by rubbing your hands together. You can also take a bath in warm water.
- Remove the kulfi from the glass/mould gently and garnish with a few chopped pistachios.
- Finally, serve the kulfi right away.
- To begin, use full cream milk for the best results.
- In addition, condensed milk can be used in place of sugar. This contributes to the flavour and thickness.
- In order to make badam kulfi, add chopped badam pieces. Alternatively, you can use badam powder.
- Most importantly, use a thick-bottomed pan and stir frequently. Otherwise, there is a risk that the milk will burn.
- Finally, to make perfect kulfis like those served in restaurants, you can use ice cream popsicle or kulfi moulds.
