This helps to bind all of the vegetables together and, of course, adds a great flavor to the kebab.

These are semi-healthy due to the abundance of green vegetables, but they are deep-fried. To make it healthier, shallow fry it like an aloo Tikki recipe. Skip the outer coating of batter and breadcrumbs if shallow frying.

Ingredients
  

  • 1  bunch palak leaves / spinach / baby spinach
  • 2 tsp  oil
  • 1  green chili / hari mirch   (finely chopped)
  • 1 capsicum   (finely chopped)
  • 3/4 cup  beans   (chopped)
  • 3/4 cup  peas   (fresh / frozen)
  • 2  potato   (boiled and grated)
  • 3/4 cup  paneer / cottage cheese  (crumbled)
  • 3 tbsp  coriander leaves   (finely chopped)
  • 3 tbsp  corn flour
  • 2 tbsp  breadcrumbs
  • 1/2 tsp  kashmiri chili powder / lal mirch powder
  • 1/2 tsp  coriander powder / dhaniya powder
  • 1 tsp  aamchur / dry mango powder
  • 1/2 tsp  garam masala powder
  • 1/4 tsp  turmeric / haldi
  • salt to taste
  • 1 cup  breadcrumbs (to coat)
  • 8  cashews   (halved)
  • oil for deep frying

Instructions
 

  • To begin, blanch the palak leaves in water for 2 minutes.
  • Squeeze out any excess water and set aside.
  • Meanwhile, heat the oil in a large kadai and add the green chilli.
  • Also, add the capsicum and sauté until the moisture evaporates.
  • Add beans and peas, or any other green vegetables of your choice.
  • Sauté for 5 minutes, or until the moisture has evaporated.
  • Allow to cool completely before transferring to the blender.
  • Together with the blanched palak, blend to a coarse paste.
  • Fill a large mixing bowl halfway with the blended paste.
  • Add grated potato, paneer, and coriander leaves as well.
  • Corn flour and breadcrumbs can also be added at this point. Corn flour and bread crumbs aid in moisture absorption and binding.
  • Combine the spices, chilli powder, coriander powder, garam masala powder, turmeric, aamchur, and salt in a mixing bowl.
  • Mix thoroughly, ensuring that the spices are well combined with the vegetables.
  • Grease your hands with oil and form small patties. Greasing oil keeps the dough from sticking to your hands.
  • To make hara bhara kabab more crispy, coat the patties with bread crumbs.

  • Now, add the prepared patties to the hot oil and deep fry them. Alternatively, for a healthier option, pan fry or bake in an oven at 180°C for 10–15 minutes.
  • Fry, stirring occasionally, in medium hot oil.
  • It does not take long to prepare hara bhara kabab. Remove the kabab as soon as the cashews turn golden brown.
  • The fried hara bhara kabab should be drained onto a kitchen towel.
  • Finally, serve the hot hara bhara kabab with sauce and masala tea.
