Peanut Masala Recipe: Crisp and tasty masala groundnuts coated in besan or chickpea flour, best served as a tea-time snack or starter. Essentially, the recipe is for spicy masala peanuts in the style of Haldiram, which can easily become a favorite snack for both children and adults. It only takes a few minutes to prepare and can be stored in an airtight container for weeks.

Peanuts have numerous applications and can be used in a variety of ways on a daily basis, including curries, chutneys, and snacks. In other words, groundnut is coated with spiced chickpea, rice flour, and cornflour and then deep-fried until it retains its crisp shape. Personally, I prefer this method of preparing masala groundnut, but there are others. Another popular method is to serve peanuts with onion and tomatoes, then top with spice powder and lemon juice. It is also referred to as raja masala, raja special, or masala kadlekayi. It is popular in Karnataka and is typically served as a starter or appetizer in restaurants. However, the focus of this post is on the coated masala groundnut recipe.

Despite the fact that the recipe is extremely simple to prepare, there are a few tips and variations for this crisp and easy peanut masala recipe. First, while preparing the spice coating with the flours, add a small amount of water so that it forms a lump and sticks to the peanuts. We don’t want a thin batter here; we want a thick paste. Second, I’ve added baking soda to the spice coating as an optional extra. and if you do not want to add it, it can be safely ignored. Also, deep fry these peanuts on a low flame to ensure even cooking. Otherwise, the outer layer may cook faster, leaving the peanuts on the inside raw. Finally, store these masala groundnuts in an airtight container for longer shelf life and to keep them fresh for up to a month.

Peanut Masala is a spicy and crunchy mixture of chickpea flour coated and fried peanuts that make excellent tea-time snacks. These are extremely simple to make at home and can be kept for a long time. Here's how to do it.

Ingredients
  

  • 1/2 cup gram flour / besan
  • 2 tbsp  rice flour
  • 2 tbsp  corn flour
  • 1/4 tsp  turmeric / haldi
  • 1 tsp  kashmiri red chilli powder
  • 1/2 tsp  ginger garlic paste
  • pinch baking soda   (optional)
  • 1/2 tsp  salt
  • 2 cups  350 grams peanuts / groundnuts
  • 2 tsp  oil
  • 3 tbsp  water
  • oil for deep frying
  • 1/2 tsp  chaat masala   (optional)

Instructions
 

  • To begin, combine 1/2 cup besan, 2 tablespoons rice flour, and 2 tablespoons corn flour in a large mixing bowl.
  • Also add 1/4 teaspoon turmeric, 1 teaspoon chilli powder, 1/2 teaspoon ginger garlic paste, a pinch baking soda, and 1/2 teaspoon salt
  • Mix thoroughly, ensuring that all of the spices are well combined.
  • 2 cup skinned peanuts and 2 teaspoon oil are also added.
  • Mix thoroughly; the oil aids in coating the peanuts with masala.
  • Add 2 tbsp of water and mix well.
  • Add 1-2 tbsp more water in batches until the peanuts are thoroughly coated with besan.
  • Rest for 5 minutes to ensure that the spices are thoroughly absorbed.
  • Add a tsp of rice flour and stir to combine. This aids in the separation of peanuts.
  • deep fry in hot oil for 20 minutes or bake at 180°C for 20 minutes
  • Fry on a low to medium heat, stirring occasionally.
  • Fry until the foam in the oil disappears and the peanuts turn golden and crisp.
  • blot the fried peanuts with kitchen paper
  • 1/2 teaspoon chaat masala, mixed well This contributes to the flavour.
  • Finally, serve crunchy peanut masala immediately or store in an airtight container for up to a month.

Notes:

  • To begin, while adding corn flour is optional, it does make the besan coating crisper.
  • The same method can also be used to make masala cashews or masala almonds.
  • In order to achieve a bright red colour in the masala peanuts, add a drop of red food colouring.
  • Finally, for more crunchy bites, fry the peanut masala on low heat.
