Lahsun Sev Recipe: A flavorful snack made with chickpea flour and a generous amount of garlic The recipe is very similar to any other namkeen or sev recipe, but with the addition of lehsun or garlic. This is my friend’s mother’s recipe for besan sev. This besan sev has a medium spice flavor and a crisp texture. Sev can be served as a tea-time snack or as a savory snack for Diwali.
I only made a small amount for the blog, but the recipe can easily be doubled or tripled. As a fried snack, sev has a long shelf life that can last several months. However, make sure to keep them in an airtight jar.
To make this sev, you’ll need a chakli press. This sev will necessitate the use of discs with slightly larger holes. The spices can be changed to suit your taste and preferences. I did not include baking soda in the recipe, but you can add a pinch if you like.

First, I added 8 garlic cloves, which should be enough for the besan quantity listed below. Having said that, you can also increase or decrease according to your preferences. Second, I used a flower-shaped shaper, which should be ideal for this recipe. However, if you prefer, you can explore the thin or even thicker layers. Finally, deep fry these in a medium to low flame to ensure even cooking. Also, when frying, do not overcrowd them and fry them in small batches.

Lahsun Sev Recipe
- 10 clove garlic
- 1/2 tsp ajwain / carom seeds
- 1/2 tsp pepper
- 1/4 tsp turmeric
- 1/2 tsp kashmiri red chilli powder
- 3 tbsp oil
- pinch hing / asafoetida
- 3/4 tsp salt
- 2 cups besan / gram flour
- water (for blending & kneading)
- oil (for frying)
- To begin, combine 10 clove garlic, 1/2 tsp ajwain, 1/2 tsp pepper, 1/4 tsp turmeric, and 1/2 tsp chilli powder in a blender.
- 1/4 cup water should be added to make a smooth paste.
- Fill a large mixing bowl halfway with masala paste.
- Add 3 tbsp oil, a pinch of hing, and 3/4 tsp salt
- Make sure everything is well combined by whisking and mixing thoroughly.
- Add in Mix in 2 cups besan with a spoon.
- Add 1/4 cup water and begin kneading.
- Knead the dough until it is smooth and super soft, adding water as needed.
- Grease the chakli maker with the flower mould.
- Fill the press with dough in the shape of balls.
- Afterward, press and spread the sev in hot oil, forming a circle in the oil and making sure not to overlap.
- After a minute, flip the pan over and fry the other side until golden and crisp.
- Drain on kitchen paper to absorb excess oil.
- Finally, break up the lahsun sev and enjoy it as a tea time snack.
- To begin, make a smooth garlic paste; otherwise, pressing will be difficult.
- Also, knead the dough to make it super soft in order to get crispy and tasty sev.
- To add flavour, you can also combine cumin and ajwain.
