Spaghetti Recipe: A traditional Italian dish made primarily of spaghetti noodles and pasta sauce. Furthermore, the recipe includes vegetable meatballs, making it a complete meal with both proteins and vitamins.

My spaghetti bolognese recipe is simple to prepare and serves a deliciously rustic and family-friendly meal. This vegetarian and vegan version of a flavorful spicy tomato sauce is loaded with a few fresh vegetables and a lot of veggies. It’s a hearty and filling dinner or lunch that’s ideal for any night of the week!

It should also be noted that serving bolognese with spaghetti is unusual outside of Italy. While my spaghetti bolognese may not be authentic, it is based on a traditional Italian recipe and thus has a similar flavour profile.

Do not overcook them to the point where they soften and become mushy while serving. Second, and perhaps most importantly, pasta sauce or tomato sauce is essential to this recipe. For this recipe, I made it from scratch, but you can also use high-quality store-bought pasta sauce. Finally, while the spagetti is cooking, add 1-2 drops of oil with salt. This ensures that it does not stick and that it cooks evenly.

Ingredients
  

For Making Spaghetti:

  • 2  litre water
  • 1/2 tsp  salt

To Make Spaghetti Sauce:

  • 1 tbsp  oil
  • 2  clove garlic (finely chopped)  (finely chopped)
  • 2 tbsp onion  (finely chopped)
  • 1  bay leaf / tej patta
  • 2 cups  tomato (crushed)  (crushed)
  • 1/2 tsp  salt
  • 1 tsp  sugar
  • 1/2 tsp  pepper (crushed)  (crushed)
  • 1/4 tsp  mixed herbs

For Vegetarian Meatballs:

  • 2 potato
  • 1/2 carrot
  • 2 tbsp  capsicum   (finely chopped)
  • 2 tbsp  corn (boiled & crushed)  (boiled & crushed)
  • 1  clove garlic   (finely chopped)
  • 2 tbsp  peas   (boiled & crushed)
  • 2 tbsp onion (finely chopped)
  • 1/2 tsp  pepper   (crushed)
  • 1/2 tsp  mixed herbs
  • 2  slices bread
  • 1/2 tsp  salt
  • 1/2  lemon
  • ▢oil for frying

Instructions
 

Step-By-Step Instructions For Making Vegetarian Spagetti

  • First, in a large pot, bring 2 litres of water to a boil with 1/2 teaspoon salt.
  • When the water begins to boil, add a handful of spaghetti.
  • Boil for 8 minutes, or until the spaghetti is al dente (firm when bitten). Cooking instructions can be found on the package.
  • Allow the water to drain and cool.
  • Meanwhile, make the spaghetti sauce by heating 1 tbsp oil and sautéing 2 garlic cloves until golden brown.
  • 2 tbsp onion, slightly sautéed
  • Add 2 crushed tomatoes and stir well.
  • Continue to stir until the colour changes slightly.
  • Add 1 bay leaf, 1 teaspoon sugar, and 1/2 teaspoon salt
  • Cook until the sauce thickens and the water has completely evaporated.
  • Now add 1/2 tsp pepper and 1/4 tsp mixed herbs
  • After a thorough mixing, the spaghetti sauce is ready. set aside
  • Prepare veggie meatless balls by combining 2 potatoes, 1/2 carrots, 2 tbsp capsicum, 2 tbsp corn, 2 tbsp peas, 2 tbsp onion, and 1 garlic clove.
  • Add 1/2 teaspoon pepper, 1/2 teaspoon mixed herbs, 1/2 teaspoon salt, and 1/2 teaspoon lemon
  • Make sure the spices are well combined.
  • To absorb moisture, tear 2 slices of bread or use breadcrumbs.
  • Mix thoroughly, adding more bread slices or bread crumbs as needed until a dough forms.
  • Make small ball-sized balls and shallow fry or bake for 15 minutes at 180°C.
  • fLip over fry the balls until they are golden brown on all sides.
  • Simmer for 5 minutes after adding prepared veggie meatless balls to spaghetti sauce.
  • In addition, heat a tbsp of spaghetti sauce in a tawa.
  • On high heat, add the cooked spaghetti and mix well.
  • Put the spaghetti in a serving bowl and top with the prepared spaghetti sauce and veggie meatballs.
  • Finally, top the hot vegetarian spaghetti with veg meatballs with basil leaves.

Notes:

  • To begin, garnish with fresh basil leaves and grated cheese for a more robust flavour.
  • Also, when making veggie balls, adjust the amount of breadcrumbs or bread.
  • In addition, if you’re too lazy to make your own pasta sauce, use store-bought.
  • Tomatoes: For the bolognese sauce, I recommend using ripe, red, sweet, and not overly sour or tangy tomatoes. In place of fresh tomatoes, you can use canned tomatoes or Italian whole tomatoes with juice. Simply crush the tomatoes before adding them to the dish.
  • Tomato paste: Though tomato paste adds depth to the sauce, you can omit it if you don’t have any on hand.
  • Herbs: Substitute fresh herbs for dried herbs. 1 to 2 teaspoons dried basil can be used in place of fresh basil.
  • Add-ins: To add richness to the dish, add some cream to the sauce. If you prefer, you can grate some vegetarian parmesan cheese on top of the dish before serving.
  • Spiciness: If you are sensitive to pungency or heat, reduce or omit the red chilli flakes from my spaghetti bolognese recipe.
