Second, the toppings can be varied, and you can combine any vegetables of your choice. However, ensure that these vegetables are finely chopped so that they can be easily topped with these pancakes. Finally, I shaped these uttapams into mini shaped discs, which is optional. There are no restrictions on how you can shape it.

Everyone enjoys uttapam. This is an Instant Rava Uttapam recipe made with rava (suji/sooji) and curd. It's simple to make and goes well with a variety of South Indian chutneys.

For The Batter:

  • 1 cup  rava / semolina / suji  (coarse)
  • 1/2 cup  curd
  • 3/4 tsp  salt
  • 1/2 cup water

For Garnishes:

  • 1 onion  (finely chopped)
  • 1/2  capsicum  (finely chopped)
  • 1  carrot  (grated)
  • 1  tomato   (finely chopped)
  • 2 tbsp  coriander  (finely chopped)
  • 1 inch  ginger   (finely chopped)
  • 1 chilli  (finely chopped)
  • few curry leaves   (chopped)
  • 1/4 tsp  salt


  • First, combine 1 cup rava, 1/2 cup curd, and 3/4 teaspoon salt in a large mixing bowl.
  • Mix thoroughly, ensuring that the curd is well combined.
  • Add 1/2 cup water and mix well, adjusting consistency as needed.
  • Rest for 20 minutes, or until the rava has completely absorbed.
  • Examine for consistency If necessary, add more water.
  • Make the vegetable toppings by chopping 1 onion, 1/2 capsicum, 1 carrot, and 1 tomato.
  • Add 2 tbsp coriander, 1 inch ginger, 1 chilli, a few curry leaves, and 1/4 tsp salt as well.
  • Mix thoroughly to ensure that everything is well combined.
  • Pour the rava batter into small uttapam moulds.
  • Top with a tbsp of prepared toppings and gently press down.
  • 1 teaspoon oil should be poured around the uttapam.
  • Cover and cook for a minute, or until the base is thoroughly cooked.
  • Cook both sides by flipping the pan.
  • Finally, serve the rava uttapam with tomato sauce or coconut chutney.
