Dal Dhokli Recipe: Dal Dhokli is the ultimate comfort food, a sweet, spicy, and tangy lentil stew with freshly made whole wheat noodles cooked in the lentils. A hearty one-pot meal from Gujarat and Maharashtra, India, where it is also known as Chakolya or Varan Phal.
A traditional Gujarati one-pot meal with toor dal and wheat dough It is a one-pot meal that does not require rice or flatbread because it contains both. However, it can also be served as a side dish with rice or roti chapati, making a complete meal.
This wholesome recipe has complex flavours from tamarind and jaggery, soft melt-in-your-mouth textures from homemade wheat noodles, and nutty flavours from mustard seeds, cumin seeds, and peanuts.
This simple daal dhokli recipe is always a good detox meal after a vacation or while recovering from an illness.
The dal in this dal dhokli recipe is the same as Gujarati khatti meethi dal. Dhokli is made from whole wheat flour, also known as chapati atta. The dough is made with atta and a few spices. The dough was then rolled into a thin circle and cut into diamond shapes. Then it was added to the simmering dal and cooked until it was soft and no longer raw.
There are numerous dal recipes made with various types of lentils for various purposes. However, none of them are one-pot meals and require a side dish such as rice or chapati. However, this dal dhokli recipe is unique in that it combines lentils and wheat to create a complete meal.
On a daily basis, I make various dal dhokli recipes using leftover dal and roti/chapatis. However, it is an impromptu recipe in which I do not adhere to the traditional method and instead combine whatever leftover dish is available. whereas in this recipe, I used the authentic Gujarati method of adding uncooked roti directly to the boiling dal curry. In addition, I prepared the dhokli-specific dal recipe in the authentic style.
In addition, some tips, suggestions, and variations to this authentic Gujarati dal dhokli recipe are provided. To begin, make sure to roll thin dhoklis because thick ones will take longer to cook in dal. Furthermore, uncooked dhokli may cause indigestion after consumption. Second, add the thin dhokli one by one, being careful not to overcrowd the dal soup. Overcrowding may cause dhokli to stick together and form a lump while boiling. Finally, the combination of wheat and lentil would thicken the curry as it cooled. As a result, if you are serving it later, you may need to add water to achieve the desired consistency.

For The Dal
- 1/2 cup toor dal (rinsed)
- 1½ cup water
- 1 tsp oil
- 2 tbsp peanuts
- 1 tsp ghee / clarified butter
- 1 tsp mustard
- 1/2 tsp cumin / jeera
- 1 chilli (broken)
- pinch hing / asafoetida
- few curry leaves
- 1 tomato (finely chopped)
- 1 tsp ginger garlic paste
- 1½ cups water
- 1/4 tsp turmeric
- 3/4 tsp kashmiri red chilli powder
- 1/4 tsp cumin powder
- 1/2 tsp coriander pwoder
- 1/4 tsp garam masala
- small piece jaggery / gud
- 3/4 tsp salt
- 1 tsp lemon juice
- 2 tbsp coriander (finely chopped)
- 1 cup wheat flour / atta
- 1/4 tsp turmeric
- 1/2 tsp kashmiri red chilli powder
- 1/4 tsp ajwain / carom seeds
- 1/2 tsp salt
- 2 tsp oil
- 1/2 cup water
Step-By-Step Instructions For Making Dal Dhokli
- First, combine 1/2 cup toor dal, 1½ cup water, and 1 teaspoon oil in a cooker.
- Keep 2 tbsp peanuts in a small bowl.
- Cook for 5 whistles or until the dal is thoroughly cooked.
- Remove the boiled peanuts and set aside.
- To achieve a smooth consistency, whisk and mash the dal.
- Heat in a large kadai now 1 tsp ghee, sputter 1 teaspoon mustard, 1/2 teaspoon cumin, 1 chilli, pinch hing, and a few curry leaves
- Add 1 tomato and 1 tsp ginger garlic paste and sauté until the tomatoes are soft and mushy.
- Mix in the cooked dal and 1½ cup water, adjusting the consistency as needed.
- Also add 1/4 teaspoon turmeric, 3/4 teaspoon chilli powder, 1/4 teaspoon cumin powder, 1/2 teaspoon coriander powder, and 1/4 teaspoon garam masala
- Make sure all of the spices are well combined.
- Now, add the cooked peanuts and cook for 1 minute, or until the flavours have been absorbed.
- In addition, add a small piece of jaggery, 3/4 teaspoon salt, and 1 teaspoon lemon juice.
- Stir and bring to a boil. Set aside until the dhokli is ready.
Recipe For Dholki Preparation:
- To begin, combine 1 cup wheat flour, 1/4 teaspoon turmeric, 1/2 teaspoon chilli powder, 1/4 teaspoon ajwain, 1/2 teaspoon salt, and 2 teaspoon oil in a large mixing bowl.
- Mix until the spices are well combined.
- Add 1/2 cup water and knead the dough.
- knead the dough until it is smooth and soft.
- Make a ball of dough and dust it with wheat flour.
- Roll out to a slightly thick consistency, dusting with wheat flour if necessary.
- cut into diamond shapes or any size you want
- When the dal comes to a boil, add the dhokli pieces and mix well.
- Cover and cook for 10-15 minutes, or until the dhokli are completely cooked.
- Finally, stir in 2 tablespoons coriander and serve dal dhokli with hot steamed rice.
- First, adjust the dal’s consistency as needed. The dal thickens as it cools.
- Also, cut the dhokli into the desired shape. Diamond shapes, on the other hand, appear to be more attractive.
- Adding jaggery improves the flavour of the dal as well.
- Finally, when the dhokli is completely cooked, the dal dhokli recipe tastes fantastic.
