- 3 cups murmura / puffed rice (75 gm)
- 1 tsp ghee / clarified butter
- 1 cup (230 gm) jaggery / gud (230 gm)
- First, dry roast 3 cup murmura on a tawa over low heat.
- Dry roast the murmura until it becomes crisp. Set aside.
- 1 tsp ghee and 1 cup jaggery, heated in a large kadai
- Stir continuously over a low flame until the jaggery melts.
- Stir over a low flame until frothy.
- Drop the syrup into a bowl of water to test the consistency; it should form a soft ball. Alternatively, boil for another minute and then check.
- Turn off the heat and gently fold in the dry roasted murmura.
- Mix until the mixture is well combined and the jaggery syrup is evenly coated.
- Grease or wet your hand with ghee and prepare ladoo while the mixture is still warm.
- Finally, when stored in an airtight container, murmura ladoo / pori urundai can be enjoyed for a month.
- To begin, the consistency of the jaggery syrup is critical for making perfect ladoo.
- If you want a slightly harder ladoo, boil the jaggery syrup a little longer.
- In addition to murmura, add crushed peanuts or dry fruits.
- Instead of puffed rice, you can use puffed flattened rice/puffed poha. You can use less jaggery or slightly increase the amount of puffed flattened rice.
- The consistency/thickness of the jaggery syrup is critical when making ladoos. It should have the consistency of a soft to firm ball. Making ladoos will become difficult if the weather continues to deteriorate. If it’s thinner, the ladoos will fall apart easily, leaving a stringy syrup behind.
- If the syrup consistency is correct, the ladoos will harden and become crisp as soon as they are made.
- Once prepared, keep them at room temperature until completely cool. They can then be kept in an airtight container for several weeks. They also make great edible, homemade gifts.
- Finally, once the mixture has cooled, making ladoo will be impossible. So, reheat in the microwave and prepare the pori urundai.
