- 10 cashews / kaju (halves)
- 1 tbsp raisins / kishmish / dry grapes
- 1/2 cup bombay rava / sooji / semolina (fine)
- 1 cup water
- 3/4 cup sugar (add ½-1 cup depending on your choice)
- 2 tbsp saffron water / kesari
- 1/4 tsp cardamom power / elachi powder
- To begin, heat 2 tbsp ghee / clarified butter over low heat and roast 10 cashews and 1 tbsp raisins.
- Set aside once the cashews have turned golden brown.
- 1/2 cup bombay rava, roasted in the same ghee Use rava of the fine/coarse variety.
- Roast for 5 minutes on low heat, or until aromatic. Set aside.
- 1 cup water, boiled in a large kadai
- Using a low flame, add 1/2 cup roasted bombay rava.
- Stir constantly until the rava absorbs the water and no lumps form.
- Afterward, add 3/4 cup sugar (add 1/2-1 cup depending on how sweet you like it).
- Stir constantly over a low flame until the sugar dissolves.
