Ingredients
  

  • 2+1/4 tbsp+cup  ghee / clarified butter
  • 10  cashews / kaju   (halves)
  • 1 tbsp  raisins / kishmish / dry grapes
  • 1/2 cup  bombay rava / sooji / semolina   (fine)
  • 1 cup water
  • 3/4 cup sugar  (add ½-1 cup depending on your choice)
  • 2 tbsp  saffron water / kesari
  • 1/4 tsp  cardamom power / elachi powder

Instructions
 

  • To begin, heat 2 tbsp ghee / clarified butter over low heat and roast 10 cashews and 1 tbsp raisins.
  • Set aside once the cashews have turned golden brown.
  • 1/2 cup bombay rava, roasted in the same ghee Use rava of the fine/coarse variety.
  • Roast for 5 minutes on low heat, or until aromatic. Set aside.
  • 1 cup water, boiled in a large kadai
  • Using a low flame, add 1/2 cup roasted bombay rava.
  • Stir constantly until the rava absorbs the water and no lumps form.
  • Afterward, add 3/4 cup sugar (add 1/2-1 cup depending on how sweet you like it).
  • Stir constantly over a low flame until the sugar dissolves.
  • In addition, 2 tbsp saffron water or kesari food colour (Soak a few saffron threads in 2 tbsp warm water for 15 minutes)
  • Also, add 1/4 cup ghee and stir constantly.
  • Check that the mixture is well combined and that there are no lumps.
  • Cover and cook for 2 minutes, or until the rava is completely cooked.
