Kathal sabji Recipe: A popular meat substitute curry recipe made with tender or young jackfruit slices It is regarded as one of the premium curries and is typically served with rotis or naan for special occasions and celebrations. Young jackfruit slices can be used in a variety of curry recipes, but this one is heavily influenced by dhaba-style gravy preparation.

Kathal, also known as jackfruit, is native to Southeast Asian countries. Jackfruits are commonly used to make sweets, breakfast, and snacks, but they can also be used to make curries. Because of its texture, it is frequently used as a meat substitute, and gravy-based kathal curry is one such popular gravy sabzi recipe.

Jackfruit, like mangoes and some berries, is an Indian summer fruit. While we eat ripe jackfruit plain, I use unripe jackfruit to make kathal pulao, kathal biryani, kathal curry, and jackfruit payasam.

The type of curry, in particular, varies depending on where it is made. This recipe is heavily influenced by north Indian dhaba-style cooking. However, in South India, particularly in my hometown, it is made as dry as kheema. It’s finely chopped and stir-fried with basic spices and herbs. More importantly, it is prepared without onion or garlic and is served at festival and special occasion lunch and dinner. This, on the other hand, is a typical restaurant-style curry with onion and garlic flavours. As a result, I recommend that you try this recipe at least once and serve it to your friends and family.

In addition, some additional tips, suggestions, and variations to the kathal ki sabji recipe. First and foremost, I strongly advise using tender raw or young jackfruit for this recipe. Ensure that you get raw, as ripe ones will release more sweetness into the curry. Second, I attempted to mimic the meat marination process by marinating the tender jackfruit with spices and yoghurt. This will add more taste and flavour to the curry, but it is not required and can be skipped. Finally, if you can’t find tender fresh raw jackfruit, you can try canned jackfruit. Look for young jackfruit in your supermarket; it should have the same flavour.

Kathal Sabji Recipe

The sabzi is flavorful and tasty, with a meaty texture from the cooked kathal. For those who are unfamiliar, kathal is the Hindi word for raw, unripe jackfruit.

To Marinate:

  • 15  pieces raw jackfruit
  • 1/2 cup  curd
  • 1/2 tsp  chilli powder
  • 1/4 tsp  turmeric
  • 1 tsp  kasuri methi
  • 1 tsp  ginger garlic paste
  • 1/4 tsp  salt
  • 1/2 tsp  garam masala
  • 2 tbsp oil (for frying)

For The Curry:

  • 2 tbsp  oil
  • 2  bay leaf
  • 1 inch  cinnamon
  • 4  pods cardamom
  • 7  cloves
  • 1 tsp  cumin
  • 1 onion  (finely chopped)
  • 1 tsp  ginger garlic paste
  • 1/2 tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp  coriander powder
  • 1/2 tsp  cumin powder
  • 1/2 tsp salt
  • 3 tomato (finely chopped)
  • 1 cup  water
  • 1/4 tsp garam masala
  • 2 tbsp  coriander   (finely chopped)


  • To begin, place 15 pieces of raw jackfruit in a large mixing bowl. To prevent discoloration, soak the jackfruit in saltwater immediately after chopping. You can also use tinned or frozen jackfruit.
  • add ½ cup curd, ½ tsp chilli powder, ¼ tsp turmeric, 1 tsp kasuri methi, 1 tsp ginger garlic paste, ¼ tsp salt and ½ tsp garam masala.
  • Mix well and set aside for 30 minutes to marinate.
  • Heat 2 tbsp oil in a pan and add marinated jackfruit.
  • Fry on medium heat until the kathal is thoroughly cooked. Set aside.
  • 2 tbsp oil, heated in a large kadai 2 bay leaves, 1 inch cinnamon stick, 4 pods cardamom, 7 cloves, and 1 teaspoon cumin Cook until the spices become aromatic.
  • Add 1 onion and 1 tsp ginger garlic paste to the mix.
  • Cook, stirring frequently, until the onions are golden brown.
  • Add 1/2 tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder, 1/2 tsp cumin powder, and 1/2 tsp salt while the heat is low.
  • Cook until the spices become aromatic.
  • additionally, add 3 tomatoes and cook thoroughly.
  • Cook until the tomatoes have softened and become mushy.
  • Mix in the fried raw jackfruit (kathal).
  • Mix in 1 cup of water, adjusting the consistency as needed.
  • Cover and cook for 15 minutes, or until the jackfruits are tender and the flavours have been absorbed.
  • 1/4 teaspoon garam masala and 2 tablespoons coriander are now added. thoroughly combine
  • Finally, serve kathal ki sabji alongside roti or naan.
