These laddus are nutrient-dense, heavy, and filling, thanks to the addition of whole wheat flour, ghee, and dry fruits in addition to gond.

The Hindi word for gum is gond. These are natural gums made from tree sap. Some of these gums are edible, while others are not.

Gond Ke Laddu is a super-healthy snack or dessert made with edible gum resin (gond), whole wheat flour, heaps of makhana, chironji, various seeds, and enriching dry fruits. Make these for the upcoming winter season and feed them to your family to keep them healthy.

Ingredients
  

  • 6 tbsp  ghee / clarified butter
  • 1/2 cup  gond / dinka / edible gum / anutu ( 100 gm )
  • 2 tbsp  cashew / kaju   (chopped)
  • 2 tbsp  almonds / badam  (chopped)
  • 2 tbsp  raisins / kishmish
  • cup  dry coconut / kopra, grated  (100 gm)
  • 2 tbsp  poppy seeds / khus khus / gasgase
  • 3/4 cup  dry khajur / chuara / dry dates (seedless)  (100 gm)
  • 1/4 tsp  cardamom powder / elachi powder
  • 1/4 tsp  nutmeg powder / jaiphal powder
  • 1 cup  jaggery / gud (200 gm)
  • 2 tbsp  water

Instructions
 

  • First, heat 1/4 cup ghee in a tawa and roast 1/2 cup gond in batches.
  • Roast on low heat until the gond puffs up and turns a light golden brown colour.
  • Set aside the roasted gond and continue to fry the rest of the gond in the same manner.
  • Use your hands or a rolling pin to crush the gond. Please keep in mind that if you crush them in a mixi, they will turn into a very fine powder.
  • Roast 2 tbsp cashews, 2 tbsp almonds, and 2 tbsp raisins in the remaining ghee.
  • Raise the heat to medium-high and roast until the potatoes are golden brown. Place everything in the same bowl.
  • Moreover, dry roast1½  cup dry coconut in a pan over low heat.
  • Put the roasted coconut in the same bowl.
  • 2 tbsp poppy seeds, roasted until they start to pop
  • Place the roasted poppy seeds in the same bowl as the almonds.
  • In addition, add 3/4 cup dry khajur to a mixi. Make certain that there are no seeds.
  • Without adding any water, blend to a coarse powder.
  • Place the khajur powder on a tawa and roast it with 2 tbsp ghee over a low heat.
  • Roast the khajur until it turns golden brown.
  • Put the roasted khajur powder in the same bowl.
  • Add 1/4 tsp cardamom powder and 1/4 tsp nutmeg powder as well.
  • Mix thoroughly, ensuring that all of the dry fruits are well combined. Set aside.
  • In addition, heat 1 cup jaggery and 2 tbsp water in a tawa.
  • Melt and boil over medium heat until a string consistency is achieved.
  • Mix the jaggery syrup into the dry fruit mixture.
  • When the mixture is still hot / warm, begin making ladoo (with greased hands). as it cools and hardens
  • Finally, store gond ladoo / dinkache ladoo in an airtight container for a month.

Notes:

  • First, combine a variety of dry fruits of your choice, such as pistachios, anjeer, or walnuts.
  • Sugar can also be used in place of jaggery. However, make sure the sugar syrup has a string consistency of 1 string or it will be difficult to shape the ladoo.
  • Furthermore, if your mixture cools and you are unable to make ladoo, simply warm it in a microwave for 30 seconds and continue making ladoo.
  • This recipe can be cut in half, doubled, or tripled.
  • If you can’t make laddu and the mixture crumbles and looks dry, add 1 to 2 tablespoons room temperature ghee. Form the laddu by combining all of the ingredients.
  • If the ladoo loses its shape and flattens, it means there is too much ghee. Allow the mixture to cool completely before shaping into laddus.
  • Finally, gond ladoo / dinkache ladoo can be stored in an airtight container for a month or more if refrigerated.
