There is no need to include any sugar in the recipe. Dry Fruits Laddu Recipe
- 3 tbsp raisins / dry grapes
- 1 tbsp ghee / clarified butter
- 1 cup seedless dates / karjur
- 1/4 cup pistachios
- 1/4 cup cashews
- 1/2 tsp cardamom powder
- 1/4 cup almonds
- 1 cup seedless dates, dry blended for 4-5 pulses in a blender
- Dates should be coarsely blended. Set aside.
- finely chop the cashews, pistachios, and almonds You won't enjoy the crunchy bites if you powder them.
- Now, add a tbsp of ghee to a kadai.
- Mix in all of the dry fruits, such as raisins, cashews, pistachios, and almonds.
- Fry them for 3-4 minutes on medium heat, or until they change colour slightly.
- Now, coarsely chop the dates.
- Continue to fry the dates on medium heat, smashing them with a spatula. This allows dates to separate and mix evenly with other dry fruits.
- Continue to sauté after adding cardamom powder.
- Sauté until the dates begin to release oil.
- Turn off the heat and set aside for a minute or two to cool.
- Then start making laddus right away. If you don't let it cool completely, you won't be able to make laddus.
- Ladoo can be served immediately or stored in an airtight container.
- First, adjust the proportion of dry fruits to your liking.
- You can also use coconut, dried figs, or nuts of your choice.
- Alternatively, if you prefer it sweeter, increase the proportion of dates.
- Also, don’t powder the dry fruits because the crunchy bites will be lost.
- Nuts: Any type of nut will work in this recipe. While I use nuts that are readily available to me, you can make these healthy ladoos with nuts that are readily available to you – walnuts, pine nuts, pecans, macadamia nuts, and hazel nuts. I add cashews, pistachios, and walnuts because I can get them locally. You can experiment with different nut proportions.
- I recommend not skipping the dates and figs in this recipe. Both have cohesive sticky properties that aid in the binding and formation of the laddu. They also add so much sweetness that no sugar or other sweetener is required.
- Dates: Make use of high-quality dates. Use pitted dates whenever possible. Remove the seeds and chop the dates if they have them.
- Dried figs: Soak them in hot water for a couple of hours if they are too dry, tough, or dense. After that, drain all of the water, pat dry with a clean kitchen towel, and chop them.
- If you don’t have desiccated coconut, you can leave it out. You can also use 2 tablespoons fresh grated coconut instead, which will add a nice flavour. However, keep in mind that the shelf life of fresh coconut will be significantly reduced. So try to eat it quickly and store any leftovers in the refrigerator for 1 to 2 days.
- Scaling: To make a large batch, the recipe can easily be doubled or tripled.
- Finally, don’t be concerned if the mixture cools and you are unable to make laddus. You can microwave for a minute or sauté on a tawa for a minute to rewarm the dates.
