There are hundreds of ways to make frankie stuffing, but this recipe only calls for potatoes and paneer with a cheese topping.
One of the most versatile and popular recipes, especially among younger generations, is the kathi roll or frankie. It’s adaptable due to the variety of stuffing options it provides. The aloo paneer kathi roll with grated cheddar cheese is one such simple and effective stuffing combination.
One of the easiest snacks to make is kathi roll or frankie recipes. Essentially, you can try this recipe with leftover curry and chapati. The leftover curry (preferably dry sabzi) is stuffed into a chapati and rolled up. The flavorful and lip-smacking frankie masala used in this recipe, on the other hand, is crucial. In this recipe, I made the masala in an instant by combining the available dry spice powders. Some people prefer roasting the dry spices and grinding them to powder, but I prefer this quick method. You can make it in bulk and store it in an airtight container to sprinkle on top of the stuffing whenever you want. In other words, there is no specific frankie masala for different kathi rolls; it is a generic spice blend.
Around where we live now, there are a lot of places that specialise in wraps and Frankies, and you can also get whole wheat wraps with a variety of fillings. I’ve tried a few and liked them because they’re a quick and easy meal when you’re hungry but don’t have time to cook.
Consider your Frankie to be a blank canvas, and express yourself! Fillings and sauces of your choice can be added. The Frankie stuffing can include a variety of vegetables, potatoes, paneer, and even beans such as rajma (kidney beans) or chana (chickpeas).

You can omit the maida entirely, but adding plain flour helps the dough roll smoothly. Second, for tanginess, I added spicy green chutney and tomato sauce while stuffing. To make it more flavorful and tasty, add spicy maggi sauce or spicy red chutney with a combination of tamarind chutney. Finally, if you want to add cheese, combine shredded and grated cheddar cheese. For any kathi roll or frankie recipe, avoid using pizza or mozzarella cheese.

For The Roti Dough:
- 1 cup wheat flour
- 1 cup maida / all-purpose flour
- 1/2 tsp salt
- 2 tbsp oil
- water (for kneading)
To Make Aloo Pattice, Combine The Following Ingredients:
For The Chilli Vinegar:
- 1/2 cup vinegar
- 2 chilli (finely chopped)
For Frankie Masala:
- 1 tbsp chilli powder
- 1/2 tsp turmeric
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 1 tsp chaat masala
- 1 tsp aamchur
- 1/4 tsp pepper powder
- 1/2 tsp salt
Roti Making Instructions:
- To begin, combine 1 cup wheat flour, 1 cup maida, 1/2 teaspoon salt, and 2 tablespoons oil in a large mixing bowl.
- Mix thoroughly to ensure that everything is well combined.
- Knead the dough, adding water as needed.
- Knead the dough until it is smooth and soft. Cover and set aside for 20 minutes to rest.
- Knead the dough again and form it into a ball.
- Roll out evenly and evenly dust with wheat flour.
- Place the rolled dough on a hot, oiled tawa.
- Cook for a minute before flipping.
- Grease both sides of the roti with oil and cook both sides.
- The roti is done. Set aside.
Preparation Of Chilli Vinegar:
- First, combine 1/2 cup vinegar and 2 chilies in a small bowl.
- Mix thoroughly and set aside for 10 minutes to allow the chilli vinegar to settle.
Preparation Of Frankie Masala:
- To begin, combine 1 tbsp chilli powder, 1/2 tsp turmeric, 1 tsp cumin powder, 1 tsp coriander powder, and 1/2 tsp garam masala in a small bowl.
- 1 teaspoon chaat masala, 1 teaspoon aamchur, 1/4 teaspoon pepper powder, and 1/2 teaspoon salt
- Mix thoroughly to ensure that all of the spices are well combined. Frankie masala is all set.
Preparation Of Aloo Pattice:
- First, heat 2 tbsp oil in a large kadai and sauté 2 clove garlic, 1 inch ginger, and 1 chilli.
- Sauté for a minute after adding 3 tbsp tomato sauce.
- Cook for a minute after adding 1 tbsp of prepared frankie masala.
- 2 potatoes, 1 cup paneer, and 1/2 teaspoon salt are now added.
- Mix thoroughly to ensure that everything is well combined.
- Add 2 tbsp coriander and stir well. The aloo mixture is complete.
- Now, lubricate the hand with oil and make a pattice.
- Cook over medium heat until golden brown. Set aside.
Frankie Putting It All Together:
- First, spread green chutney on the roti.
- Put the pattice on top of the chutney.
- Finish with finely chopped onions, 1 tablespoon chilli vinegar, and prepared frankie masala.
- Also, drizzle with tomato sauce and grate cheese on top.
- Roll tightly and wrap in butter paper.
- Finally, serve the aloo frankie with additional tomato sauce.
- First and foremost, adding maida to the dough is optional. For a healthier option, prepare entirely with wheat flour.
- Also, shape the aloo pattice according to your preferences.
- In addition, if you are serving it in a lunch box, wrap it in aluminium foil.
- If you don’t want to make the aloo tikki for Frankie, just stuff the wheat rotis with the spiced mashed potato stuffing. When you’re short on time and want to avoid the frying part, this is a good option.
- The frankie stuffing can be customised to your liking. You can add more grated vegetables such as beetroot, radish, carrots, cucumber, and so on.
- You can top it with your favourite chutneys or sauces.
- The recipe can be easily scaled to produce a small or large batch.
- Finally, a generous amount of cheese is added to the aloo frankie recipe.
What exactly is a Frankie?
Frankie is a wrap filled with various fillings that is served as a street food snack in various parts of India. A vegetarian frankie typically includes a variety of toppings such as veggie stir fry, legumes, paneer, cheese, potato tikki, veg cutlet, and lentil kabab. As a filling, you can use any other leftover vegetable. If you don’t like yoghurt, try a sauce or chutney instead.
Can we substitute mayonnaise for the curd?
Yes, you can substitute mayonnaise for the curd. Because both ingredients have a similar texture, they will complement each other well in this recipe. Keep in mind that curd has a slightly different flavour than mayonnaise. You can also add sour cream if desired.
Is there a substitute for the yoghurt raita in this veg frankie recipe, as I dislike sweet yoghurt as a topping?
If you don’t like the sweet yoghurt raita topping, leave it out. For a more savoury flavour, add green chutney and sweet tamarind chutney to the veg frankie. Frankie with aloo tikki, green coriander chutney, and sweet tamarind chutney is delicious!
