Neer Dosa Recipe: Neer dosa are crepes made from ground rice batter that are thin, fluffy, and lacy. In Karnataka, these super soft and tasty dosas are also known as neer dose. The recipe is gluten-free and vegan by nature.

Neer dosa is yet another dosa variation from Karnataka cuisine. In tulu, the word ‘neer’ translates to ‘water,’ which means ‘water dosa.’ These dosas are so named because the batter is watery rather than thick like traditional dosa batter.

A popular dosa variation made with rice batter comes from the cuisines of Udupi and Mangalore. It’s a simple, easy, and quick morning breakfast recipe that doesn’t require urad dal batter. It is traditionally served with coconut-based gravies such as kori gassi and channa gassi, but it also goes well with spicy kara chutney.

One of the most popular delicacies in the South Canara region, made entirely of rice batter. It is a healthy breakfast option for those who do not want to deal with the hassle of fermentation and urad dal. Furthermore, by using thin batter, the batter can be poured randomly without the need for a circular movement of the ladle.

Plain rice flour is used to make neer dose. To thin the batter, the traditional method requires soaking and grinding. Alternatively, with rice flour, you can quickly prepare a thin batter by adding water and pouring it onto the pan to make soft and tender dosas.

Neer dosas are simple to make because fermentation is not required. You only need to soak the rice for 4 to 5 hours before grinding it. You can begin making the dosas once the batter is ready. The rice can also be soaked overnight.

Neer dosa can be served with veg sagu, vegetable kurma, or potato kurma in addition to coconut chutney. Serve this dosa with coconut milk or milk sweetened with jaggery for children.

In addition, some helpful hints, suggestions, and variations for making neer dosa. First and foremost, I strongly recommend using sona masuri or idli rice for this recipe. If you use basmati rice, you may not get the same tenderness and softness from the dosa. Second, I would recommend using a nonstick pan with long edges for this recipe (as shown in the video). A cast iron tawa can also be used, but the result will be a crisp dosa, which is not typical of neer dose. It is also optional to add coconut while blending; the dose can be prepared solely with rice. Finally, serve these dosas while they are still warm and soft.

Ingredients
  

  • 1 cup  sona masuri rice / dosa rice
  • 1/2 cup coconut  (grated)
  • 1 tsp  salt
  • cup water

Instructions
 

  • First, soak 1 cup rice in water for 5-6 hours.
  • Drain all of the water and transfer to a blender.
  • 1/2 cup coconut is also recommended.
  • Without adding much water, blend to a smooth paste.
  • 1 tsp salt and 2½  cup water are now added.
  • Mix thoroughly, making sure the batter is thin and watery.
  • Carefully pour the dosa batter onto the hot tawa.
  • Cook for 1 minute on medium heat, covered.
  • When the dosa is completely cooked, it is ready to serve. Neer dose should not be cooked on both sides.
  • Finally, fold the dosa and serve it immediately with mint chutney or coconut chutney.

Notes:

  • To begin, soak the rice thoroughly so that it can be easily blended into a smooth paste.
  • Furthermore, the addition of coconut is optional. However, it improves the flavour.
  • Also, because we are not flipping and cooking both sides, cook the dosa in steam.
  • The batter should be watery, thin, and flowing. The batter should be light and fluffy.
  • If the batter has a pouring consistency, the neer dosa will have tiny holes and be lacy. If not, this indicates that the batter is too thick. So, to thin it out, add some more water.
  • Cracks in the neer dose will also appear if the batter is too thick.
  • If the batter becomes too thin, the dosas will fall flat and break while being lifted. In this case, add some rice flour to thicken the batter slightly.
  • Before you pour the batter, make sure the pan or tawa is very hot.
  • Stir the batter thoroughly with the ladle before making each neer dose.
  • The tawa should also be well seasoned. The dosas will stick to the pan otherwise.
  • While grinding the batter, you can optionally add some coconut. You can add 2 to 3 tablespoons of fresh grated coconut.
  • Sona masuri, parimal rice, and surti kolam are used to make neer dose.
  • When the dosas are done, do not stack them while they are still hot because they will stick together. When they’ve cooled, stack them up.
