Ingredients
  

  • 1 cup ghee / clarified butter
  • 2 cups  besan / gram flour
  • 1 cup  milk powder  (unsweetened)
  • 1/4 tsp cardamom powder
  • 1½  cup  sugar
  • 1 cup  water
  • 2 tbsp  pistachios  (chopped)
  • 2 tbsp  almond / badam   (chopped)

Instructions
 

  • First, heat 1 cup ghee in a large kadai and add 2 cups besan.
  • Roast on a low heat until the besan becomes aromatic.
  • After about ten minutes, the besan will begin to release ghee.
  • Now stir in 1 cup milk powder and 1/4 teaspoon cardamom powder. Cooking time should not be exceeded. Set aside.
  • 1½ cup sugar and 1 cup water in a large kadai
  • Stir in the sugar and bring to a boil for 5 minutes.
  • Boil the sugar syrup until it reaches a string consistency.
  • Stir in the prepared besan milk powder mixture while keeping the flame on low.
  • Cook until the mixture comes together and becomes smooth.
  • Place the mixture on a baking sheet lined with parchment paper.
  • Top with 2 tbsp pistachios and 2 tbsp almond.
  • Rest for 30 minutes, or until completely set.
  • Now, using a sharp knife, cut to the desired size.
  • Finally, serve the delicious besan milk cake immediately or store in an airtight container in the refrigerator for up to a week.
