Sweet Daliya Recipe
- 1 tbsp Ghee
- 1/2 cup dalia, or 100 g cracked or broken wheat
- 1.5 to 1.75 cup water
For Making Sweet Daliya
- 1.5 cup milk or add as required
- 1/3 cup sugar or add as per taste
- 1/2 tsp cardamom powder
- 1 tbsp chopped almonds
- 1 tbsp chopped cashews
Daliya Pressure Cooking
- In a 2 litre pressure cooker, melt 1 tablespoon ghee.
- Maintain a medium-low heat and add 1/2 cup dalia (cracked wheat or broken wheat).
- Combine it with the ghee and roast the dalia in ghee on a low to medium-low flame.
- While roasting, keep stirring constantly.
- On a low to medium-low heat, roast for 3 to 4 minutes. The dalia will become aromatic and change colour.
- Then pour in 1.5 to 1.75 cups of water. If you're using a large cooker, add more water. Stir and combine thoroughly.
- Pressure cook for 5 to 6 whistles or 5 to 6 minutes on a medium flame.
- When the pressure has subsided on its own, remove the lid and check to see if the dalia is cooked thoroughly. If not, add more water and pressure cook once more.
Making Daliya (Sweet Daliya)
- To the cooked dalia, add 1.5 cups milk.
- Add 1/3 cup sugar, or as needed.
- Keep the cooker on a medium-low heat while you mix everything together.
- Allow the mixture to come to a gentle boil and then simmer. At times, stir.
- Cook for 8 to 9 minutes on low heat. Stir frequently to prevent the milk from sticking to the bottom of the cooker. Check the flavour and add more sugar if necessary. You can also add more milk to make a slightly thinner sweet dalia. This sweet dalia has the consistency of rice kheer.
- Mix in 1/2 teaspoon cardamom powder.
- 1 tablespoon of chopped almonds and 1 tablespoon of chopped cashews
- Stir everything together and cook Daliya for a minute or two.
- Daliya can be served hot or warm.
- To begin, if you are cooking sweet daliya in an open kadai, soak it for at least 30 minutes.
- Also, to keep the crunchiness, add dry fruits at the end.
- If you are not comfortable with sugar, you can substitute jaggery.
- Finally, when cooked with fresh homemade ghee, sweet daliya tastes fantastic.
