First and foremost, I would strongly advise toasting the bread before frying it with spices and vegetables. Otherwise, the bread will become soggy and spongy. Second, the recipe can be improved by adding vegetables such as green peas, beans, and even broccoli. Finally, instead of tomatoes, use Maggie hot and sweet tomato sauce to make a spicy and sweet bread upma.

I recommend homemade bread, but you can use any bread – whole wheat bread, multigrain bread, brown bread, or white bread. However, make sure that the bread you use is soft so that it can absorb the flavours of the spices and herbs. This adds a lot of flavour.

To make this dish, you can use fresh bread slices or even bread that has been sitting for a few days. There is no need to slice the edges of fresh bread slices. If the edges of a few days old bread have become dense, slice them.

Bread upma is simply bread that has been tossed in a spicy mixture of spices, herbs, onions, and tomatoes. Each bite of bread absorbs the flavours of the tempering masala and transforms into a delectable addictive dish – bread upma. This quick 15-minute recipe will help you whip up a delicious breakfast or snack on the go.

Ingredients
  

  • 6 slices bread  (white / wholemeal)
  • 3 tsp  oil
  • 1/2 tsp mustard seeds / rai
  • few  curry leaves / kadi patta
  • 1/2  medium sized onion  (finely chopped)
  • 1 green chilli   (slit lengthwise)
  • 1/2 tsp  ginger paste / adrak paste
  • 2 medium sized tomatoes  (finely chopped)
  • 1/2 tsp  turmeric / haldi
  • 1 tsp  kashmiri red chili pwoder / lal mirch powder
  • 1/2 tsp  sugar
  • salt to taste
  • 1/2 small sized capsicum  (finely chopped (colour of your choice))
  • 2 tbsp water  (if required)
  • 3 tbsp coriander leaves  (finely chopped)

Instructions
 

  • To begin, toast the bread in a toaster or tawa until golden brown and crisp.
  • Cut the bread slices into cubes and set aside.
  • Heat the oil in a large kadai.
  • Lastly, add the mustard seeds and curry leaves.
  • Sauté until the mustard seeds begin to sputter.
  • Add onions, ginger paste, and green chilies as well.
  • Cook until the onions sweat and turn translucent.
  • Now, add the tomatoes and cook until they are soft.
  • Cook until the tomatoes are soft and mushy.
  • Mix in the turmeric, chilli powder, sugar, and salt.
  • Cook for a minute on low heat, or until the spices are thoroughly cooked.
  • Continue to sauté after adding the capsicum.
  • Make sure not to overcook the capsicum and to keep it crunchy.
  • 2 tbsp water should be added to the mixture and thoroughly mixed.
  • Toss in toasted bread cubes.
  • And gently fold in the bread pieces without breaking them.
