Ingredients
  

for kulfi:

  • 2 litre  milk
  • 1/4 tsp  saffron / kesar
  • 1/ cup  sugar
  • 1/2 tsp  cardamom powder
  • 2 tbsp  cardamom powder (chopped)
  • 2 tbsp  almonds  (chopped)
  • 2 tbsp  pistachios (chopped)

For Instant Mawa:

  • 1 cup cream
  • 1/2 cup  milk
  • 1 cup  milk powder (unsweetened)

Instructions
 

Making instant mawa or khova with milk powder:

  • First, combine 1 cup cream, 1/2 cup milk, and 1 cup milk powder in a saucepan.
  • Make sure there are no lumps by stirring and mixing thoroughly.
  • Continue to cook on a low flame without letting it burn.
  • Continue to stir the mixture until it thickens and separates from the pan.
  • When the instant mawa is ready, you can use it right away or store it in the refrigerator for up to a week.

How to make milk kulfi at home:

  • First, in a large kadai, heat 2-litre milk and 1/4 teaspoon saffron.
  • Bring the milk to a boil without letting it burn.
  • Cook over a low heat until the milk thickens.
  • Simmer for 15 minutes, or until the milk has reduced to a quarter of its original volume.
  • After the milk has thickened, stir in the prepared mawa.
  • In addition, add 1/2 cup sugar and cook for 2 minutes on low heat.
  • 1/2 teaspoon cardamom powder, 2 tablespoons cashews, 2 tablespoons almonds, and 2 tablespoons pistachios
  • The kulfi mixture is now ready to set.
  • Fill the kulfi moulds halfway with the kulfi mixture. If you don't have any moulds, you can pour it into matka or glass cups instead.
  • Cover and place in the freezer for 8 hours, or until completely set.
  • The kulfi has completely set after 8 hours and is ready to serve.
  • Finally, sprinkle a few chopped pistachios on top of the malai kulfi and serve.
