Traditionally from Scotland, date and walnut loaf is still enjoyed in many tea rooms around the country. It is also enjoyed in cafes, bakeries and tea rooms in Australia, New Zealand and across the Commonwealth. Date bread was first recorded as a recipe in 1939, and now today is used to make holidays like Christmas and Thanksgiving a little more festive.

Ingredients
  

For Soaking:

  • 2 cup  dates / khajur (300 gm)
  • 1 cup  milk (hot) (255 ml)

For Cake Batter:

  • 3/4 cup olive oil  (190 ml) 
  • 1/4 cup  curd / yogurt  (60 ml) 
  • 2 cup wheat flour / atta (260 gm) 
  • 1 tsp  baking powder
  • 1/2 tsp  baking soda
  • 1/2 cup  milk
  • 1/2 cup  walnuts  (60 gm) 
  • 5  dates / khajur  (chopped)

Instructions
 

  • To begin, soak 2 cup dates in 1 cup milk for 30 minutes in a small bowl.
  • To make a smooth paste adding milk as needed
  • Now, in a large mixing bowl, combine the blended dates paste.
  • Add 1/4 cup curd + 3/4 cup olive oil.
  • Blend the mixture until it is completely combined.
  • Place the sieve over 2 cup wheat flour, 1 teaspoon baking powder, and 1/2 teaspoon baking soda.
  • Blend and mix thoroughly until the mixture is completely combined.
  • 1/2 cup milk should be added to make a smooth cake batter.
  • 1/2 cup walnuts and 5 dates are also recommended.
  • Combine using the cut and fold method to make a mix.
  • Overmixing will result in a rubbery cake.
  • Pour the batter into the cake pan or bread mould. To avoid sticking, grease the mould and line the bottom with butter paper. I used a 21x11cm smith+nobel bread loaf pan.
  • Pat the tray twice to remove the air from the batter.
  • To make it look more appealing, top with more walnuts.
  • Preheat the oven to 350°F. Place the cake pan in the oven. Bake the cake for 45 minutes at 180 degrees Celsius (356 degrees Fahrenheit).
  • Or bake until a toothpick inserted into the centre comes out clean
  • Allow the cake to cool completely before cutting into thick slices and serving.
  • Finally, serve or store the dates cake in an airtight container.
