Carrot soup (referred to in French as Potage de CrécyPotage CrécyPotage à la CrécyPurée à la Crécy and Crème à la Crécy)[1][2][3][4] is a soup prepared with carrot as a primary ingredient.[5] It can be prepared as a cream- or broth-style soup. Additional vegetables, root vegetables and various other ingredients can be used in its preparation. It may be served hot or cold, and several recipes exist.

Ingredients
  

  • 2 tbsp  oil
  • 2  clove garlic
  • 1 inch  ginger
  • 4  carrot  (roughly chopped)
  • 1/4  potato / aloo   (cubed)
  • 1 tsp  salt
  • 2 cups  water
  • few mint / pudina
  • 1/2 tsp  pepper   (crushed)

Instructions
 

  • First, heat 2 tbsp oil in a pressure cooker and sauté 2 garlic cloves and 1 inch ginger.
  • 1/2 onion should be sautéed for another minute.
  • In addition, sauté 4 carrots, 1/4 potatoes, and 1 teaspoon salt.
  • Add 2 cups of water and a few mint leaves now.
  • Cover and pressure cook for 4 whistles, or until carrot is completely cooked.
  • Open the cooker lid and remove the mint leaves once the pressure has been released.
  • Allow the mixture to cool completely before transferring the cooked carrot to a blender.
  • Without adding any additional water, blend to a smooth paste.
  • Transfer the prepared carrot paste, along with any leftover water from the cooked carrot, to a kadai.
  • Mix thoroughly, adjusting the consistency as needed.
  • 2 minutes, or until the soup thickens
  • 1/2 teaspoon crushed pepper, or as needed
  • Finally, serve the carrot soup recipe with fresh cream or pepper on top.
