  • 1 cup broccoli florets
  • 1 medium sized potato
  • 1 small sized Onion 
  • 1 small piece ginger chopped finely
  • 1/8 tsp Turmeric powder 
  • 1 tsp Garam masala powder
  • 3 tbsp Bread crumbs/Bengal gram flour/sooji or rava 
  • Corainder leaves a handful
  • 1 tsp Lemon juice
  • oil  as needed for shallow frying


  • All ingredients should be measured and ready to go. Wash the potato and pressure cook it for 2 whistles with a cup of water. Once the pressure has been released, mash the potatoes thoroughly and set aside. Broccoli florets should be washed and cleaned. Then soak them for 3 minutes in hot water. Keep a kitchen towel on hand to completely dry them.
  • Finely chop the onions, cilantro, and ginger. Keep it handy. In a blender, mince the dried broccoli florets and set aside.
  • In a large mixing bowl, combine the minced broccoli, mashed potatoes, cabbage leaves, ginger, onion, salt, and Bengal gramme flour/bread crumbs. Mix everything together thoroughly, then add the lemon juice. Check that the dough contains no or little moisture. Then divide them into equal parts and form patties.
  • Then, in a pan, heat the oil and shallow fry the cutlets on both sides until golden brown. Each side takes at least 5 minutes to cook.
  • The broccoli cutlet is done!


  • If you are unable to form patties, add more bread crumbs/Bengal gramme flour.
  • When shallow frying, be patient and take care not to burn the cutlets.
