Lemon Rice Recipe

A simple and easy south Indian staple food recipe made with boiled rice and a generous amount of lemon flavouring It is one of the most popular breakfast recipes in South India, made with leftover rice. However, it can also be served for lunch or dinner with chutney or spicy curries.

 2 tbsp oil
 2 tbsp peanut
 2 tbsp cashew
 1 tsp mustard
 1 tsp urad dal
 1 tsp chana dal
 1 dried red chilli
 1 inch ginger (finely chopped)
 2 chilli (finely chopped)
 1 pinch hing/asafoetida
 curry leavws
 ¼ tsp turmeric
 2 cups cooked rice
 ½ tsp salt
 2 tbsp coriander (finely chopped)
 2 tbsp lemon juice

First, heat 2 tbsp oil in a large kadai and roast 2 tbsp peanuts.

2 tbsp cashew, roasted until golden brown and crunchy

Set aside the fried peanuts and cashews.

1 tsp mustard, 1 tsp urad dal, 1 tsp chana dal, 1 dried red chilli in the same oil

1 inch ginger, 2 chilies, a pinch of hing, and a few curry leaves are also recommended.

On a medium flame, sputter the tempering.

add in ¼ tsp turmeric and saute slightly.

Add 2 cups cooked rice and 1/2 teaspoon salt to finish.

Mix thoroughly to ensure that everything is well combined.

Add 2 tbsp coriander and 2 tbsp lemon juice as well. Combine thoroughly.

Finally, serve with papad or pack in a lunch box.
